With the summer in full swing there is no better way to cool down than with homemade fresh fruit popsicles.
I had been trying out a number of different fruit combinations with my two girls but the ‘Tropical Fruit’ flavour was by far their favourite.
With just 3 ingredients they are super easy to make and healthy too!
Tropical Fruit Popsicles
(makes approximately 8 popsicles)
1 cup of fresh pineapple
1/2 cup of fresh mango
1/2 cup of coconut milk (from carton)
1/2 cup water (if you find the mixture a little too sweet you can add more water)
Just add all the ingredients together and blend until smooth (I just use my Hand Blender ** for this)
Once you have pureed the ingredients pour into Popsicle Moulds ** and pop them in the freezer.
You will need to allow at least 4 hours for the popsicles to freeze properly.
- Freeze any left over coconut milk in ice cube trays and use them another time in smoothies or for another batch of popsicles
- run the base of the ice lolly mold for a few seconds under the tap to help release them from the mould (make sure you don’t allow any water to get inside the mould)
What’s your favourite combo?
